When the air begins to turn cool and crisp, it’s so fun and rewarding to crank up the oven and bake something cinnamon-filled or pumpkin-spiced, right? From pies and cakes to bars and cookies, there are endless opportunities to channel classic fall flavors into special snacks and treats that your family will love. And this list of more than thirty amazing fall recipes is sure to inspire you. You might just find a new favorite (or two, or three…)

Of course, you may live in a warmer area, and if so, maybe it’s not really all that cool and crisp outside! Still, check out these desserts—lots of them are chilled or no-bake! From creamy chilled pies and layered bars to autumn-inspired cheesecake, they are so refreshing and indulgent, you’ll want to make them year-round!

So let’s get into the recipes!

Mini pumpkin pies topped with piped whipped cream

Impossible Pumpkin Pie Cupcakes

What is an impossible pumpkin pie cupcake, you ask? It’s a delightful mini pumpkin pie you can hold in your hands! Made in a muffin tin, each is the perfect size for an individual serving of pie. They’re made with all of the usual ingredients you’d put into a pumpkin pie, so die-hard pie lovers will love them.

For “frosting,” I use whipped cream, to make them just like a real pumkpin pie, but you could use any frosting or topping you like. So this year, instead of the usual, why not make a batch of these adorable mini pies, instead?

Cream Cheese Stuffed Carrot Bundt Cake Topped with Orange Glaze and Chopped Nuts

Cream Cheese Stuffed Carrot Cake with Orange Glaze from Carlsbad Cravings

Swirled with a sweet cream cheese filling, this dark and spicy carrot cake is perfect for a cool, crisp fall day. Like a standard carrot cake, this one is rich and moist and full of soft, sweet grated carrot, cinnamon and other spices, and chopped pecans. But from there, you add a sweet cream cheese filling, and an orange cream cheese glaze when it’s out of the oven. Seriously delicious, folks.

I would serve this with a cup of coffee for the adults, and a glass of milk or apple cider for the kids! This dessert is so elegant, I think it’s a great choice for a holiday or other special occasion. The Bundt cake slices are so pretty on the plate, don’t you think?

A square of pumpkin spice sugar cookie bars with cream cheese frosting on a whitewashed wooden surface with cinnamon sticks

Pumpkin Spice Sugar Cookie Bars from Delightful E Made

Pumpkin pie meets sugar cookies in these easy and pretty bar cookies from Delightful E Made! The base of the bar cookies is a sweet sugar cookie dough with added pumpkin. This dough is dense buttery, and perfect for pressing into a baking pan. In the oven, it turns slightly crisp and crumbly on the bottom, while staying rich and moist on top.

From there, you’ll make a smooth, creamy frosting with cream cheese and pumpkin spice. Spread onto the cooled bars, the frosting makes this one indulgent bake! It’s a perfect treat for after school, or to make on the weekends with the kids.

Pumpkin Snickerdoodles

Ah, snickerdoodles. If you love soft sugar cookies, then you will crave these. Just like a classic snickerdoodle, these cookies are buttery, perfectly sweet, and rolled in cinnamon sugar before baking. Each one is like a little pillow, perfectly moist and chewy with an airy, soft texture.

But to make them extra-perfect for fall, this recipe incorporates pumpkin! Real pumpkin puree gives them a pretty color and that creamy pumpkin flavor which goes perfectly with the slightly tangy snickerdoodle dough. And to top it all off, this may be one of the easiest recipes ever!

A square of layered pumpkin lush dessert, topped with caramel and nuts, on a small white plate.

Pumpkin Lush

Have you ever had a “lush” dessert? Made with several layers of cold and creamy goodness, any kind of “lush” dessert is a special treat… but this easy no-bake pumpkin lush might just be my favorite. It’s made with a graham cracker crust, pumpkin-spice pudding, and a creamy whipped cream topping. Then the whole thing is decorated with caramel drizzle and chopped pecans. Yum.

I love that this dish is super easy to pull together, and looks like a showstopper. Pro tip: It can be tricky slicing and serving such a soft dessert, so to get neat slices, I recommend placing the pumpkin lush in the freezer to harden a little bit. From there, plate and serve, maybe with a cup of rich, dark coffee or your favorite hot cocoa!

Grandma’s Famous Pecan Pie

Family recipes are the best, and this one is definitely one of our favorites. It’s an old-fashioned pecan pie, complete with a flaky pie crust, gooey filling, and golden-brown pecans on top. And with a prep time of only ten minutes, this classic pie is easy to pull together, even on a busy holiday morning.

Fair warning: if you try this version of pecan pie, you’ll never make any other. Why? It’s got a secret ingredient: orange zest! The addition of real orange flavor to the pie is an elegant, elevated twist that really sets it off. Top it with whipped cream, a scoop of ice cream, or nothing at all—it’s perfect, no matter how you “slice” it.

A serving plate with a pile of pumpkin chocolate chip cookies. A ceramic milk jug and brick wall are in the background of the shot.

Pumpkin Chocolate Chip Cookies

One cookie we never get tired of is chocolate chip. Whether they’re small and crispy, soft and chewy, or jumbo-sized and studded with chocolate chunks, we love every variation of this classic cookie! Which brings me to our new, fall-themed favorite: pumpkin chocolate chip cookies!

That’s right, these buttery, brown-sugar bakes are perfect with an addition of pure pumpkin puree. The creamy pumpkin and chocolate chips are a match made in heaven! If you’re feeling extra festive, try one of these easy cookies with a pumpkin spice latte. Sheer heaven!

Pumpkin Cheesecake Balls from Cakes Cottage

If you’re looking for a pumpkin-spiced no-bake treat, these might just be the perfect option. Pumpkin cheesecake balls are adorable, truffle-sized bites of real pumpkin cheesecake. But there’s no need for a bain-marie or springform pan in this recipe! These simple treats are easy to mix, roll, and chill (and eat!).

The cheesecake mix is made with real pumpkin, cream cheese, confectioner’s sugar, and gingersnaps. Are you drooling yet? From there, a simple white chocolate coating adds the perfect touch, making the cheesecake balls easy to eat and creating a pretty presentation.

Pumpkin Lasagna from OMG Chocolate Desserts

Pumpkin lasagna? You heard that right! But it’s not savory (although, now that I think of it, that could be good!). Anyway, this pumpkin lasagna is a sweet, lush-type dessert with several scrumptious layers! With a crumbly walnut crust, a layer of cream cheese filling, and a decadent vanilla-pumpkin layer, this is one heavenly recipe! A sweet whipped topping sets it off perfectly.

Sliced banana cake roll on a work surface dusted with powdered sugar and scattered with slices of fresh banana.

Banana Cake Roll with Cream Cheese Filling from Eat Cake for Dinner

While some of the desserts in this lineup are heavy and rich, this one is surprisingly light! It’s a fun play on banana bread and banana cake. A springy, light banana sponge cake is baked on a jelly-roll pan, and is then cooled and wrapped around smooth and creamy cheesecake filling. The beautiful spiral is so appealing when you cut into this cake! There’s no need for glaze or frosting on this dreamy dessert—a simple dusting of confectioner’s sugar is all you need.

A graphic with several photographs of apple pie bites, baked and unbaked, and "Crescent Apple Pie Bites" in bold lettering.

Apple Pie Bites

Apple Pie Bites are a sweet little treat when you don’t want to bake a whole pie! I love serving these as an after-school snack, or even a sweet weekend brunch/breakfast item. Each bite is made with a piece of tart green apple, dipped in melted butter, and then rolled up in crescent dough. They’re spiced with fragrant apple pie spice, sweet brown sugar, and crunchy pecans. Easy to make, and absolutely scrumptious!

A tall, thick slice of layered pumpkin cheesecake cake, frosted with cinnamon-cream-cheese buttercream-style frosting, on a white plate. The table is covered in burlap and gingham.

Pumpkin Cheesecake Cake

This recipe combines tender, moist layers of pumpkin cake with a center layer of actual cheesecake. It’s a very unusual recipe, but let me tell you, this is a match made in heaven! The textures complement each other perfectly, and so do the flavors of real pumpkin, spicy cinnamon, and sweet, creamy cheesecake. So decadent! My mouth waters just thinking about it. And if that weren’t enough, there’s the frosting! a perfectly balanced cream-cheese frosting unites the two cakes into one elegant dessert.

An unsliced caramel banana cake roll on a long white platter. The cake roll is dusted generously with powdered sugar, and iced horizontal lines of caramel drizzle.

Caramel Banana Cake Roll from Lady Behind the Curtain

Another jelly-roll style dessert, this recipe features a simple little banana cake, made light and fluffy thanks to whipped egg whites. There’s no need for spices or nuts here: just a classic vanilla cake with real mashed banana for extra moisture and flavor.

The filling is equally simple: cream cheese, brown sugar, and vanilla are blended with whipped topping to make a fluffy, sweet cream that goes perfectly with the cake. From there, a drizzle of caramel over the top is all it needs! This one is lovely with a cup of tea.

A graphic image with three photographs of the ingredients for chocolate turtle apple slices, the assembled chocolate turtle apple slices, and a close-up shot of a decorated chocolate turtle apple slice.

Chocolate Turtle Apple Slices from Mom Loves Baking

This unusual treat is made with a base of apple slices! If you like caramel apples and chocolate turtles, this treat will be just your style. Each apple slice is coated with a thick layer of tempered chocolate, and then drizzled with caramel and nuts. I love how pretty these look on a platter, and how the apple gives everything a sweet, tart crunch.

It’s like a lollipop, truffle, and caramel apple all in one. Yum!

A square of pumpkin cheesecake bar, topped with a small piped whipped cream rosette.

Pumpkin Cheesecake Bars from Yummiest Food

Three lovely layers here! I love the clean, appealing contrast of the different layers. The crust layer is a classic buttery graham cracker crust, which goes perfectly with the cheesecake layer in the center! This cheesecake layer is easy to whip up, and bakes firm and moist, just like a traditional cheesecake recipe. From there, you’ll pour a creamy pumpkin pie custard on top, and bake until firm. These bars slice beautifully, and make a great presentation arranged on a platter. .

A square of caramel apple crisp cheesecake bar on a white plate, with drips of caramel sauce all over the plate.

Caramel Apple Crisp Cheesecake Bars from Sugar Apron

Another caramel apple combination! This one is all about contrasting textures. A buttery oat-and-graham-cracker-crust is pressed into your baking dish to make the bottom layer. You know a dessert is going to be good when you start out that way!

From there, you’ll make a sweet, silky cream cheese layer. This decadent cream cheese filling is spiked with a bit of cinnamon and ginger, making it the perfect partner for the apple crisp topping: thinly sliced apples and a spiced, floury mixture of rolled oats, sugar, and coconut oil. A drizzle of caramel is the ultimate finishing touch.

Pumpkin Crumb Coffee Cake from Collecting Memories

Something like a coffee cake, brownie, and pumpkin pie all in one, this dessert has a dense and moist texture that’s truly decadent, like a fudgy brownie (but without the chocolate).

From there, it’s all about fall flavor: pumpkin spice, with a sweet crumb topping. Perfection!

A square of cinnamon zucchini cake with cinnamon cream cheese frosting on a white plate with a cinnamon stick. The pan of cake is in the background.

Cinnamon Zucchini Cake with Cream Cheese Frosting from Six Sisters’ Stuff

I don’t know when zucchini took off as a baking ingredient, but I for one am glad that it did. Zucchini bread, zucchini muffins, and this amazing Cinnamon Zucchini Cake all take the humble veggie to new heights! Like carrots in carrot cake, the zucchini in zucchini bakes is a mild, moist ingredient that adds an almost nutty sweetness to the recipe. It pairs beautifully with the cinnamon and cream cheese frosting. Does this count as a side of veggies? Asking for a friend!

A square of Sea Salt Caramel & Carrot Poke Cake on a white plate.

Sea Salt Caramel Carrot Poke Cake from Sugar & Soul

Poke cakes are probably the ultimate easy way to make a crazy-delicious dessert. You literally bake a cake, and then poke holes into it with a straw or chopstick, so that you can pour more yumminess right in! So indulgent! This fall-themed poke cake combines a flavorful carrot cake with sweetened condensed milk for an ultra-sweet and moist cake layer. The frosting is a fluffy whipped cream mixed with cream cheese pudding mix, and the whole thing is topped with pecans and salted caramel! Gorgeous!

Salted Caramel Apple Snickers Cake from Half Baked Harvest

What a showstopper! This dramatic cake has an artistic design perfect for Halloween. The cascading layers of chocolate ganache and caramel look simply gorgeous, not to mention the amazing apple decoration dipped in caramel. But the real star of this cake is what’s underneath: three layers of chocolate-and-applesauce spice cake, frosted in a nougat-like peanut butter frosting. Whew! It’s a combination of Snickers and apple—pretty much everything you could want!

Two shots of Caramel Apple Crescent Ring, one on a black plate with a cup of glaze in the center, and the other a serving size portion on a white plate.

Caramel Apple Cream Cheese Crescent Ring

Who doesn’t love a soft crescent ring? I have a weakness for any type of pastry, especially pastry with cream cheese filling! This one is so easy to make, using easy ingredients: crescent roll dough, apple pie filling, cream cheese, and pre-made caramel sauce. Serve this easy danish-style bake with a cup of hot coffee, for breakfast, a snack, or a dessert.

Each soft, cakey cookie is made with creamy pumpkin and cinnamon. They’re delicious even without filling! But sandwiched around sweetened cream cheese frosting, they’re utterly perfect. All you have to do is mix powdered sugar with cream cheese, and you’ve got the perfect filling mixture for just about any bake! The buttery cinnamon-crumb topping is also easy to make, and really puts these muffins over the top. You’ll want to sprinkle it over everything you bake!

Top Rated Pumpkin Cake Roll from Taste of Home

This classic pumpkin roll is so highly rated, you know it’s going to be amazing! The pumpkin sponge cake is lightly spiced with cinnamon, and the old-fashioned frosting is made with cream cheese, butter, vanilla, and confectioner’s sugar. Additionally, this cake freezes beautifully, so you can make it ahead and keep it in your freezer! Just thaw it and cut it the day you’re ready to serve.

Cheesecake Pumpkin Bars from Great Grub Delicious Treats

Cheesecake and pumpkin pie are obviously a favorite combination, and for good reason! In this recipe, they’re combined into pretty layered bars with a Biscoff cookie crust! Yes, Biscoff cookies, as in the famous cookie behind the cookie butter craze! And to top it off (literally), candied pecans grace the top of these decadent bars. Perfect for Thansgiving, Christmas, or anytime!

As much as I love baking, I also love the occasional no-bake dessert. This one doesn’t disappoint. With three distinct layers of no-bake cheesecake, no-bake pumpkin pudding, and whipped cream, this is an over-the-top pie that will have everyone’s mouth watering! You’ll want to chill it well, and use a sharp knife (maybe dipped in hot water) to slice it neatly!

A wooden tray of Pie Crust Leaf Chips, with a bowl of creamy Cinnamon Dip right next to it. One cinnamon leaf chip is partially dunked in the creamy dip.

Pie Crust Leaf Chips and Cinnamon Dip from Pampered Chef

The cut leaves look so pretty, and the cinnamon sugar makes buttery pie crust into a dessert all its own. And of course, you don’t have to stick to just leaves; cut out pumpkin shapes, gingerbread men, or whatever you like! Dip into the creamy pumpkin spice dip, and enjoy.

A slice of Caramel Apple Crisp Cheesecake with whipped cream and caramel topping.

Caramel Apple Crisp Cheesecake from Cakes Cottage

This is one sumptuous dessert! The base is a traditional graham-cracker-crust cheesecake, made in a springform pan. From there, it’s topped with an apple crisp topping, and then drizzles of caramel sauce. To serve, whipped cream and more caramel are added for a truly indulgent result. After one bite of this unusual cheesecake, you’ll be asking, “Where have you been all my life?”

Pumpkin Pie Crescents from Spend with Pennies

Apple fries are wonderful! If you’ve never had them, you’re in for quite a treat! Texturally, apples are fairly similar to potatoes—so it’s no wonder they fry up beautifully into golden-brown wedges. The creamy caramel dipping sauce makes the dish complete, and is super easy to make.
